- 80 g whole grain oats
- 1 tbsp chia seeds
- 200 ml milk or plant-based alternative
- 1 medium apple
- 1–2 tbsp maple syrup or honey
- 1 tsp ground cinnamon (plus a pinch for apples)
- 0.5 tsp vanilla extract (optional)
- 1 pinch salt
- 2 tbsp natural yogurt or plant-based yogurt (optional)
- 1 tsp coconut oil or butter (for apples)
- 1 to taste topping of choice (e.g., chopped nuts, fresh apple pieces, granola)
Instructions
- In a 300-400 ml jar or bowl, mix oats, chia seeds, 1 tsp cinnamon, and salt. Add milk, maple syrup (or honey), optional vanilla extract, and yogurt. Stir thoroughly until no dry ingredients are visible.
- Wash, core, and dice the apple. Sauté two-thirds of the apple cubes in a pan with 1 tsp coconut oil or butter over medium heat for about 3-5 minutes until softened and lightly caramelized. Optionally add a pinch of cinnamon and 0.5 tsp maple syrup.
- Add the remaining raw apple cubes and the sautéed apple pieces to the oats mixture and mix well. Seal the jar or cover the bowl and chill in the refrigerator for at least 4 hours, ideally overnight (8-12 hours).
- In the morning, take the overnight oats out of the fridge and stir briefly. Add 1-2 tbsp of milk if needed to achieve the desired consistency. Serve with optional toppings like fresh apple slices, chopped nuts, or granola. Can be warmed in the microwave or pot for 30-60 seconds if desired. Keeps in the fridge for 2-3 days.
